(Kutchi / Cutchi / Gujarati. In recent years with new additions to the family our cooking includes, English, Pakistani, Italian and Irish influences.

Shaheen's Assorted Bhajia
Ingredients: 150g Gram Flour, 1/4 tspn Ajma, 2/3 hot green chillies minced, crushed garlic, 1 courgette, 1 potato, large green chillies
Method: Mix gram flour, ajma, crushed hot chillies and garlic with enough warm water to give a thick runny mix. Add salt to taste
Add thin slices courgette, potato and large chillies.
Fry in hot vegetable oil until golden. Serve with Coconut Chutney and Amlee.

My Mom's recipe always includes finely diced potatoes, onions, green chillies, cilantro, seasoning like red chilly, salt, cummin/coriander powder and a little bicarbonate soda; ajma really adds pizzazz!
Got to try with the vegetables as suggested herewith Chachi's recipe (courgettes & eggplant)! Then probably onions not needed but will experiment with these too!
