Mung / Moong jo shaak / Mung Bean Curry

This a quick proteinacious week day meal. My students from Saudi Arabia tell me that this is prison food. That is to say prisoners get mung beans for their meals! Well, mung bean curry has been one of my favs since I was a child. That and Mung Bean Soup (recipe soon).

Ingredients
Ingredients
1 cup dried mung beans; soaked overnight and boiled, mung bean cook very quickly so you don't need to pressure cook
1 onion; finely chopped
3 Cloves garlic; peeled and minced
2 inch ginger; peeled and grated
3 tomatoes; blanched, peeled and chopped
2 - 3 chilies slit through the centre
1/2 tspn tumeric powder
2 tspn coriander and cumin powders
2 tspn oil
salt to taste
1 tblspn chopped coriander for garnish

1. Heat the oil in a pan, add the onions, cook until golden brown, then add the split chilies, let them splutter.
2. Add the tomotatoes, garlic and ginger cook for 5-6 minutes, add tumeric, coriander and cumin powders, cook for 2 minutes.
3. Add the boiled beans, with the water the beans were boiled in
5 Cover and cook, until nice and thick, add coriander mix and serve.
I served it with mani / chappatti

Hi Saju, your mung beans curry looks delicious! I love them, one of my fav. quick-cooking dishes, so I will have to try this your way. Silly question for you -- it is the whole variety? They must cook in a flash when soaked overnight :)

Thanks so much for this lovely recipe. I made it last night and it was fantastic. Have brougt leftovers to work for lunch, and it tastes even better today as the flavours have had a chance to infuse. There are so few mung bean recipes on the net, do you have any others you can share please? Thanks again x

There are others where mung bean is not the main ingredient, search for mung and you will find them.

I wanted to make mung today and thought to look up a recipe instead of calling my mom...I started to use one and realized it just wasn't sounding very appetizing, so while my mung was boiling, I started a new google search and was lucky enough to stumble upon your recipe which sounded so similar to my own mother's cooking. I'm happy to say that my meal turned out delicious! =) I added a little curry powder and lime to it but everything else was same. After I was done cooking, I looked at your site again and realized you are Ismaili too! No wonder your recipe was so like my mom's. I've added your blog to my favorites. Thanks so much!!
