Rosahanbai from Kuwait always used to sing praises of pilau made from bulgar wheat instead of rice. I decided to try it.
Ingredients
1 cup bulgar wheat (wash and soak in water for a couple of hours, then drain)
1 cup stock
6 sun-dried tomatoes; diced
1 courgette; cut into 1 centimetre cubes
1 romano pepper; diced
2 cloves garlic; minced
1 inch ginger; grated
2-3 green chillies; finely chopped
2 onions; finely chopped
whole spices: stick of cinamon, 2 pods cardomom, 3 cloves, 6 peppercorns, 1 teaspoon cumin
1 tablespoon oil
1 tspn salt
Heat the oil in a pan, and add the whole spices. After they sputter and pop, add the onions, and fry until brown (almost carmelised). Add the garlic, ginger and chilli
Add the drained bulgar wheat and the sundried tomato and salt, fry for about 5 minutes.
Add the stock, cover and cook for about 15 minutes, add the courgette and let it cook for a further 10 minutes.

ENJOY. Can be served with chicken tikka.
